So Simple Broccoli Soup
Steam broccoli and onion until tender. Put in a blender with a little water. Puree. Heat and add green onion, salt and pepper.

Fresher and just as quick as opening a can ... soup
Tomato, zucchini, onion, garlic and spice.
No need to read any labels.
Chop.
Cook for as little as possible.
Add a little water.
Add a little spice (I added curry powder).
Blend with an immersion blender.
No can to recycle.

Vichyssoise
Vichyssoise [or Creamy Potato-Leek-Fennel Soup]
This recipe is from Vegetarian Times July/Aug. 2010 and well worth making. It was sweltering hot yesterday but my husband decided to made this soup. So glad he did. With chives from the garden it was a light and tasty first course. Served cold for lunch today, another hot one, may just be the ticket.
